Coconut Butter vs Coconut Oil

For the longest time, I was under the delusion that coconut butter and coconut oil were the same thing. Indeed, a lot of folks are spreading that misinformation:

… coconut oil is a solid below 78 degrees Fahrenheit. In the solid state coconut oil is called coconut butter. Coconut oil and coconut butter are actually the same thing.

Except, the thing is, they’re not the same thing:

Coconut oil is JUST the oil that is extracted from the meat. Coconut butter is the whole meat of the coconut pureed into a creamy butter. Coconut meat (by nature) is approximately 65% oil.

Thanks to Dreena Burton in her book Let Them Eat Vegan for finally clearing this up.

Though I have several jars of coconut oil on hand, my first jar of coconut butter is on the way now.
