All right, folks. It’s summer. It’s hot out. I hate having the oven on when it’s hot out. Therefore, I’m asking all of you for your super easy summer recipes. I don’t want crappy foods, I don’t want 30 Minute Meals; I want something good and tasty and easy.

not counting travel time, this is less than 30 minutes–pick strawberries (June), freeze in a bag with some sugar.
Eat with abandon when it’s hot and gross outside. Mmmmm!

aharris’ delicious pesto pasta salad
-pesto: basil, pine nuts, parmesan, oil, and lime juice (instead of lemon, that’s my secret)
-cheese tortellini
-feta cheese
-sliced prosciutto
mix ’em all up and enjoy!

Fresh Tilapia, blackened and grilled. 4 minute dinner on the George Foreman. (I have the one with the digital timer/temp…350 deg. does the trick).
Toss a salad on the side….easy!

Thanks, aharris! I never would have thought of using lime juice. It sounds like something I could eat a whole mixing bowl of! I am allergic to tomatoes so I am always up for any sauce like this.

I just go for fresh salads and fruit from the farmer’s market — or cook something large late in the evening and reheat it in the microwave when it is too hot.
